today was an interesting day...
It’s Monday so it's internship day. I tried being cute. Which means I wore shoes that are not for walking. It was a great outfit and I got compliments but I failed and had to switch shoes 2 hours in. Oh well.
So exciting stuff today at my internship. The ladies told me they are really excited about the work I do and want to keep me around as long as I would like to stay. :) I told them I would stay until school started if I could disappear in July for travel purposes. Also, expect to see our stuff or a branch off line from us in Nordstrom’s as early as this fall! Lol, we are also selling in Russia and the UK now!
Other exciting things at my internship! Today I ate something bizarre. It was a brownie with bacon and rosemary. It wasn’t inedible but it wasn’t something I was into. And yes Traci, I would most definitely classify this as weird food.
New drama has cropped up in my roommates love life. I must investigate further. Someone is dead to her, and I need to know why! This is keeps me going between episodes of ugly Betty.
I made dinner tonight and I thought it was pretty awesome. I made enchiladas with Mexican rice. First I brown the chicken with onion and garlic in a big pot. Then I add 4 cups of water one tomato, juice of lime, spices, and a square of chicken tomato bullion. Then I pull the chicken breasts out and set them on the cutting board to be cut up later. While the stock is still boiling I put in 2 cups of rice, let is boil for a minute turn to simmer, put the lid on and let sit for 20 minutes. Back to the enchiladas. I take my little corn tortillas and lightly fry them, which makes them stronger and easier to put into the casserole dish all rolled up. So I put the chicken and black olives in the tortillas and roll them up and line them up in the dish. I pour the enchilada sauce over them and cover the dish with cheese. Then the dish goes into the oven for 25 min at 450 degrees. And voila, num nums. I know you might think I’m crazy for putting black olives in Mexican food but my mom did it when we were growing up and I have no idea where she learned it from and so the tradition continues.
